2 cans black beans, rinsed and drained
1 14 1/2 oz container all natural vegetable or chicken broth
1 cup salsa
1 tsp cumin
1/2 cup sour cream
1/2 cup shredded cheese
In a blender, combine one can of beans with broth, salsa and cumin. Process until smooth.
Pour into saucepan and add the second can of beans. (Alternatively, if you prefer a smoother texture, put both cans of beans into the blender.) Cook for several minutes or until hot.
To serve, place in bowls and add a dollop of sour cream and cheese.
