Monday:  Braised Lamb Shanks, Basmati Rice – I got the lamb from our favorite farmer, but they were shanks so there will be a tiny bit of meat, and lots of veggies.

Tuesday: Cabbage & White Bean Soup, Homemade Bread

Wednesday: Lemon-Pepper Salmon, Provencal Green Beans, Honeyed Carrots

Thursday: Baked Potato Bar

Friday: Homemade Pizza, Salad

Saturday: Potato-Leek Soup, Homemade Bread

Sunday:  ?? Clean out the freezer/fridge, leftovers

This is a budget plan. Lots of inexpensive veggies, rice and beans.
