Meal Plan (Reinstitution Version)

I’m not sure why I stopped posting meal plans here. Perhaps I thought noone was enjoying them? That’s kind of silly, because I love reading other people’s menu plans! I always get lots of ideas, and I save them to Evernote to help me plan my grocery list.

So I’m reinstituting my weekly meal plan post. Even if nobody’s looking, or commenting, or appreciating them… they help me stay organized so that’s reason enough. ;-)

Dinners this week:

Monday: Chicken Tortilla Soup – I have a ton of homemade chicken broth in my fridge right now that I’ll use up for this.

Tuesday: Cheesy Tuna Patties
Side: Roasted mashed cauliflower, green beans or some other green vegetable

Wednesday: Slow Cooker Fiesta Chicken
Side: Avocado and orange salad

Thursday:  Gluten-Free Pizza Pasta – I can’t believe I never thought of this. “Pizza” in a bowl. Brilliant!
Side: Salad, homemade dressing

Friday: Leftovers, aka “Bits & Pieces”

Saturday: Eat out

Sunday: Pot Roast with potatoes, green beans, carrots

For lunches we’ll probably have tostadas, leftover soup, and I’m going to make up a big batch of Artichoke Pasta Salad (like this recipe, only with pasta added) to snack on.

Last week I made this Gluten-Free Cornmeal Cake. It was lovely. I only used half the sugar, so it was more like a sweeter corn bread than a cake. I topped it with sour cream and the tiniest drizzle of brown sugar. Really nice.
